Misen Kitchen knives

I got to know the company Misen through Kickstarter. They had a campaign there for carbon steel pans. After some searching I learned that their knives got pretty good reviews so I ordered the 5 piece Essentials Knife Set.

The knives are made from Japanese AUS-10 steel ( except the serrated is from AUS-8 steel) with a beautifully finished handle. They are nicely balanced and were extremely sharp on delivery. I do have the impression that the sharpness fades easily. They must therefore be regularly maintained with a honing steel.
Knives have a 50/50 Symmetrical Grind at 15 Degrees per side. The hardness grade is 58 HRC.

Below pictures of these knives:
Chef – 8” / 203 mm
Paring – 3” / 76 mm
Serrated – 9.5” / 241 mm
Santoku – 7.5” / 190 mm
Utility – 5.5” / 140 mm

Keep on eye on for more knives to come.
