Another knife for the collection. Isn’t she a beauty? I present you the Fiery Phoenix 8″ Chef knife from Tuo Cutlery.

This one is made in China of AUS-10 Damascus steel. It has a hardness grade of 62 HRC, that makes it for now the hardest knife in the collection.
The sharpening is very smooth and nice done. A loth smoother than the previous Wüsthof knife.
