The Hinoki Essential Knives – E1 Chef’s Knife Obsidian

This knife was the one I was looking out for the most. The obsidian matte black finish is absolutely amazing. With a weight of only 133 gr it’s also the lightest chef knife of the collection. It’s made in the home of bladesmithing, Seki, Japan out of VG-10 steel giving it a very high hardness of 61 HRC.
The sharpness out of the box was amazing, it only needed a couple of strokes on the leather strap.
