Miyabi 7000D Gyutoh
Another nice chef knife for the collection. It’s my first real Japanese knife, the 7000D Gyutoh from Miyabi. It’s sharpened at 10° which make it feel extremely sharp, by far the sharpest knife out of the factory I ever had in my hands. It’s made of CMV60 Cryodur steel. Cryodur stands for the hardening technique at – 196°C. It has a Rockwell hardness grade of 60 HRC.
The Damascus steel gives it a nice look.
